On January 1, 2011, my fiance and I embarked on a pescatarian diet as our new year's resolution. Driving our decision was a desire to be more environmentally conscious and was based around this fact: if a person cuts out terrestrial meats from his or her diet, his or her carbon footprint will be decreased by 1/4.
We knew the holidays, specifically Thanksgiving, would present the most challenges to our will power as we both have carnivorous tendencies. So in an effort to satisfy our cravings, we developed a pescatarian Thanksgiving menu.
Appetizers
Side Dishes
-Spinach salad with toasted almonds, dried cranberries & feta cheese
Main Course
I'll post photos of how our dishes turned out next week after Thanksgiving along with any tips, tricks or changes for executing these recipes.
Enjoy!

ReplyDeleteMenu sounds great! Since we are usually alone I normally make a menu like that of special dishes and for the first time in years doing the opposite and having traditional turkey! So we will have it for you this year!
